Kudos to Acton Market, which is about to celebrate its first anniversary with a potato salad contest. The winner gets a $500.00 prize and they’ll sell the potato salad, named after the winner, in their deli. What a cool idea! Wish I’d been working on a good dairy-free potato salad recipe for a while…hmmm.
It was my first time going to the grocery myself since Memorial Day Weekend. I picked up supplies to make a Forks Over Knives Quesadilla. Sadly, I didn’t realize that I didn’t have chili powder, so I substituted cumin, tumeric and a little cayenne pepper. It was a little odd, I have to say. Chili powder would make more sense. Filled with onions, bell peppers, mushrooms, spinach and cashew sauce.
The cashew sauce was good before I added in the above mentioned spices. It was okay after. Then again, the antibiotics I’m on have an impact on my sense of taste, I’m pretty sure.
