Volcanic Persimmon

At this time of year the morning sun is doing amazing things as it comes through our kitchen window.

I was preparing a persimmon for breakfast when I was unexpectedly transported to the molten heart of a volcano.

    Gorgeous. I have been swirling soft persimmon into my Yogurt. Heavenly. I found a trick for a stubborn persimmon that is taking its sweet time getting ripe. If it is half ripe, try putting it in the freezer for 24 hours. Take it out, let it thaw, and presto…it is soft !
